Ingredients

1 lb ground beef (or ground turkey or chicken)

3 medium potatoes (peeled and diced)

1 medium onion (chopped)

1 bell pepper (chopped)

2 cloves garlic (minced)

1 tsp paprika

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1 cup beef broth (or chicken broth)

1 cup cheddar cheese (shredded, or your favorite cheese)

1 tbsp olive oil (for cooking)

Fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until softened and lightly browned. Remove and set aside.
  2. In the same skillet, add ground meat. Cook over medium heat for 5-7 minutes, breaking it up with a spatula until browned and cooked through. Drain excess fat if needed.
  3. Add chopped onion, bell pepper, and minced garlic. Stir in paprika, onion powder, garlic powder, salt, and pepper. Cook for 3-4 minutes until vegetables are softened.
  4. Return cooked potatoes to the skillet. Pour in beef broth and stir to combine. Cover and simmer for 5 minutes until potatoes are tender and liquid reduces.
  5. Sprinkle shredded cheddar cheese over the top. Cover and cook for 2-3 minutes until cheese is melted and bubbly.
  6. Garnish with fresh parsley if desired. Serve hot and enjoy.
