1 lb ground beef (or ground turkey or chicken)
3 medium potatoes (peeled and diced)
1 medium onion (chopped)
1 bell pepper (chopped)
2 cloves garlic (minced)
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup beef broth (or chicken broth)
1 cup cheddar cheese (shredded, or your favorite cheese)
1 tbsp olive oil (for cooking)
Fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until softened and lightly browned. Remove and set aside.
- In the same skillet, add ground meat. Cook over medium heat for 5-7 minutes, breaking it up with a spatula until browned and cooked through. Drain excess fat if needed.
- Add chopped onion, bell pepper, and minced garlic. Stir in paprika, onion powder, garlic powder, salt, and pepper. Cook for 3-4 minutes until vegetables are softened.
- Return cooked potatoes to the skillet. Pour in beef broth and stir to combine. Cover and simmer for 5 minutes until potatoes are tender and liquid reduces.
- Sprinkle shredded cheddar cheese over the top. Cover and cook for 2-3 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley if desired. Serve hot and enjoy.
