Marinade
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic (peeled and minced)

- 3 tbsp dark soy sauce
- 3 tbsp honey
Main Ingredients
- 2 chicken breasts (approx 350g/12.5 oz), chopped into bite-sized pieces
- 1 red bell pepper, chopped into large chunks
- 1 onion, peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro, roughly torn
Instructions
- Prepare Marinade: In a small bowl, thoroughly mix the vegetable oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey to create the flavorful marinade.
- Marinate Chicken: Place the diced chicken breasts into a bowl and pour over three-quarters of the marinade, reserving the remainder for brushing while cooking. Cover the bowl and refrigerate for 1 hour, or up to 24 hours for more intense flavor.
- Prepare Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling, or prepare metal skewers if using.
- Preheat Grill or Griddle: Heat your BBQ or griddle until it is very hot, establishing the ideal cooking temperature to achieve a nice char on the chicken and vegetables.
- Assemble Skewers: Thread the ingredients alternately onto each skewer—start with a piece of chicken, then a chunk of red bell pepper, followed by another piece of chicken and a square of onion. Continue this pattern until all chicken and vegetables are used. Discard any leftover marinade from the bowl.
- Cook Skewers: Place the assembled skewers on the hot grill or griddle. Cook for 8-10 minutes total, turning the skewers 3-4 times for even cooking and brushing them halfway through with the reserved marinade. Ensure the chicken is thoroughly cooked by slicing open the largest piece to verify there is no pink remaining inside.
- Garnish and Serve: Once cooked, sprinkle the skewers with sesame seeds and roughly torn coriander leaves. Serve hot alongside your choice of salad and rice or potatoes, such as Greek Potatoes, for a complete meal.
