Ingredients
1 cup chopped carrots (about 1 large)
1/2 cup pecans
1/2 cup coconut flakes
1 cup oats (rolled or quick)
1/2 cup medjool dates (about 5)
1/4 cup cashew butter (or nut butter of choice)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup shredded coconut (for rolling)
Instructions
- Add the chopped carrots into a food processor and blend until finely chopped. Transfer to a bowl.
- In the food processor, add the pecans and coconut flakes. Pulse until they form a sandy texture.
- Add the oats and dates to the processor and pulse again until the mixture resembles a sand-like texture.
- Add the cashew butter, cinnamon, and nutmeg. Process until a dough forms.
- Shape the dough into tablespoon-sized balls.
- Roll each ball in shredded coconut to coat evenly.
- Place the bites in an airtight container and store in the fridge for 1–2 weeks.
Notes
- Use any nut or seed butter of your choice.
- Add raisins, dried cranberries, or chopped walnuts for extra texture.
- Adjust sweetness by adding maple syrup or agave nectar.
- Store in the fridge for up to 2 weeks or freeze for up to 3 months.
- Use certified gluten-free oats if needed.
