Ingredients
3/4 cup (168 g) unsalted butter
1 cup (200 g) packed light brown sugar
1/4 cup (50 g) granulated sugar
1 large egg + 1 large egg yolk, at room temperature
1 tablespoon pure vanilla extract
1 3/4 cups (220 g) all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon kosher salt + more flaky sea salt for sprinkling
1 1/2 cups (255 g) semi-sweet chocolate chips or roughly chopped chocolate
Instructions
- Place the butter in a small saucepan over medium-low heat. Stir occasionally, scraping the bottom and sides until browned bits form and it smells nutty, about 5–7 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine browned butter, brown sugar, and granulated sugar. Stir to combine.
- Add egg, egg yolk, and vanilla. Mix until smooth.
- Gently fold in flour, baking soda, and salt until no dry streaks remain. Dough should be soft but not sticky.
- Fold in chocolate chips until evenly distributed. Cover and chill dough for at least 1 hour (up to overnight).
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Let chilled dough sit at room temperature for 20 minutes to soften.
- Using a 1 ½ oz cookie scoop, portion dough onto baking sheets, leaving 2 inches between cookies.
- Bake for 12–13 minutes, until edges are golden but centers are soft.
- Sprinkle warm cookies with flaky sea salt if desired. Cool slightly before serving.
Notes
- For richer flavor, use dark chocolate chunks instead of semi-sweet chips.
- Add chopped walnuts or pecans for crunch.
- Store in an airtight container for up to 1 week or freeze for up to 3 months.
- Reheat in microwave for 10–15 seconds or oven at 350°F for 3–5 minutes.
- Chilling the dough prevents spreading and enhances flavor.
