This Teriyaki Ground Beef and Broccoli is a quick and delicious one-pan meal with savory ground beef, tender broccoli, and a rich teriyaki sauce, topped with a creamy homemade yum yum sauce for extra flavor.

Ingredients

2 Tablespoons Olive Oil, divided

12 oz Broccoli Florets

1 pound Ground Beef

1” piece Ginger, minced (optional)

2 cloves Garlic, minced (optional)

1 cup Teriyaki Sauce

1/4 cup (60g) Light Mayo

1 1/2 Tablespoon (23g) Sriracha or Chili Garlic Sauce

1 Tablespoon (21g) Honey

1 Tablespoon (15g) Rice Vinegar

1/2 teaspoon Garlic Powder

Rice or Cauliflower Rice (for serving)

Toasted Sesame Seeds (for serving)

Scallions, thinly sliced (for serving)

Instructions

  1. Make the Sauce: In a small bowl, mix together the light mayo, sriracha or chili garlic sauce, honey, rice vinegar, and garlic powder. Set aside.
  2. Cook the Broccoli: Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Add the broccoli florets and leave them untouched for 2-3 minutes to allow them to char on one side. Flip the broccoli and cook for another 2-3 minutes. Once done, transfer the broccoli to a bowl and set aside.
  3. Cook the Ground Beef: In the same skillet, heat 1/2 tablespoon of olive oil. Add the ground beef and brown it on one side before breaking it apart and fully cooking it through.
  4. Add Ginger and Garlic: Once the beef is fully cooked, create a well in the center of the pan and add the remaining 1/2 tablespoon of olive oil, followed by the ginger and garlic. Cook for 30-60 seconds until fragrant, then stir them together with the beef.
  5. Add Teriyaki Sauce: Pour in the teriyaki sauce and stir everything together. Let it cook for 1-2 minutes until the sauce thickens and sticks to the beef.
  6. Combine with Broccoli: Add the cooked broccoli back into the skillet and turn off the heat. Stir everything together to combine.
  7. Serve: Serve the teriyaki ground beef and broccoli over rice or cauliflower rice. Drizzle with the homemade yum yum sauce and garnish with toasted sesame seeds and thinly sliced scallions, if desired.

Notes

  • For a spicier option, increase the amount of sriracha or chili garlic sauce in the yum yum sauce.
  • If you’re looking for a low-carb meal, swap the rice for cauliflower rice.
