Instructions
- Preheat oven to 425°F (218°C). Bake tater tots according to package instructions for about 30 minutes, or until golden and crispy.
- While the tater tots bake, prepare sausage gravy. Add pepper flakes and cayenne powder if you want extra heat.
- In a skillet, scramble the eggs with salt and pepper until cooked through but still moist.
- Assemble each breakfast bowl by adding a layer of crispy tater tots at the bottom.
- Top the tater tots with scrambled eggs.
- Pour sausage gravy generously over the eggs.
- Sprinkle taco cheese blend on top.
- Optional: Finish with fresh salsa before serving.
