Ingredients
1 pound lean ground beef
1 (1 oz) packet taco seasoning
¼ cup water, or beef broth
1 cup refried beans (optional)
2 cups cooked Mexican rice, or instant Mexican rice
4 burrito-sized flour tortillas
2 cups Fritos or Doritos
1 cup cheese dip, warmed (like Tostitos)
1 cup shredded Mexican cheese blend
½ cup sour cream
Salsa (if desired)
Instructions
- In a sauté pan, cook the ground beef, breaking it apart as it cooks, until it is no longer pink. Add the taco seasoning and water (or beef broth), stirring to combine. Let it cook for another minute, then stir in the refried beans. If the mixture is too thick, add a little more water to reach your desired consistency.
- Cook your instant Mexican rice or heat any leftover rice you have on hand. Warm the tortillas in the microwave for 30 seconds to make them easier to fold.
- Lay a tortilla flat on a clean surface. Add a couple of tablespoons of the meat mixture in the center. Top with rice, Fritos, a spoonful of cheese dip, shredded cheese, and a dollop of sour cream. Fold in the sides of the tortilla and roll it tightly into a burrito. Repeat the process with the remaining tortillas.
- For extra crunch, heat a pan over medium heat and toast the outside of the burritos for a couple of minutes on each side. This step adds a delicious crispy texture.
- Serve the burritos immediately with salsa if desired.
Notes
- For extra heat, add hot sauce or chopped jalapeños to the meat mixture.
- If you prefer a vegetarian version, skip the beef and use extra beans, rice, and veggies like sautéed peppers and onions.
- You can use other types of cheese dips like queso blanco or nacho cheese for variety.
- To freeze, wrap burritos in plastic wrap and foil without the Fritos, as they can get soggy when reheated.
