6 large crepes or thin cake layers

Instructions
- Beat the cream cheese, sugar, and vanilla extract in a mixing bowl until smooth and creamy.
- Whip the heavy whipping cream to stiff peaks, then gently fold it into the cream cheese mixture.
- Combine the diced strawberries with sugar and let them sit for 10 minutes to release their juices.
- Mix the crushed cookies with melted butter until the mixture resembles wet sand.
- Layer each crepe with the cream filling, cookie crumbs, and the macerated strawberries. Roll tightly into a sushi-like shape.
- Wrap each roll in plastic wrap and refrigerate for at least 1 hour to set.
- Once chilled, slice the rolls into 1-inch pieces and dust with powdered sugar before serving.
Notes
- For a different flavor, substitute strawberries with raspberries, blueberries, or peaches.
- To make the rolls dairy-free, use dairy-free cream cheese and whipping cream alternatives.
- Store in an airtight container in the refrigerator for up to 3 days.
