Ingredients

1 1/2 cups quick oats or rolled oats (150g)

2/3 cup flour (spelt, white, or oat) (80g)

1/2 cup sugar or xylitol (100g)

1/2 tsp ground cinnamon

1/2 tsp baking powder

1/4 tsp salt

1/2 cup oil or butter (100g)

2 1/2 cups diced strawberries (300g)

1 1/2 tsp cornstarch or arrowroot (7g)

1 tbsp pure maple syrup or sweetener of choice (15g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper.
  2. In a large bowl, stir together the oats, flour, cinnamon, salt, baking powder, and sugar.
  3. Add the oil or melted butter to the oat mixture and stir until combined.
  4. Firmly press 2/3 of the dough into the prepared baking pan.
  5. In a medium bowl, combine the diced strawberries, cornstarch, and maple syrup. Stir until the strawberries are evenly coated.
  6. Spread the strawberry mixture over the dough in the pan.
  7. Crumble the remaining dough and sprinkle it on top of the berry filling, pressing down firmly.
  8. Bake in the preheated oven for 45 minutes or until the top is golden brown.
  9. Let the bars cool to room temperature, then refrigerate until chilled to help them firm up before serving.
