Strawberry mochi is a delightful Japanese dessert that combines chewy rice dough with a luscious, creamy filling. The contrast of textures makes these little bite-sized treats irresistible.

Ingredients

100g Glutinous rice flour

30g Corn starch

35g Sugar

180ml Milk

23 drops Strawberry food color

15g Butter

150ml Non-dairy whipping cream

50ml Dairy whipping cream

12 tbsp Condensed milk

3 tbsp Strawberry puree

Instructions

  1. In a microwave-safe bowl, combine glutinous rice flour, sugar, milk, and strawberry food color. Mix until fully dissolved.
  2. Cover the bowl with plastic wrap and steam in the microwave for 20 minutes or until the dough becomes translucent.
  3. Once steamed, add the butter to the dough and mix until well combined.
  4. Knead the dough until it becomes soft and stretchy. Allow the dough to cool for 45 minutes.
  5. In a mixing bowl, combine non-dairy whipping cream, dairy whipping cream, condensed milk, and strawberry puree. Use a hand mixer until stiff peaks form.
  6. Dust your working surface and the mochi dough with cooked glutinous rice flour to prevent sticking.
  7. Flatten the dough into a circular shape and pipe the filling in the center of the mochi wrapper.
  8. Pinch the four corners of the mochi wrapper together, then pinch the remaining corners together to seal the mochi.
  9. Tap the bottom of the mochi with cooked glutinous rice flour or cornstarch to remove excess moisture.
  10. Gently brush the assembled mochi with a brush to remove any excess flour.
  11. Your homemade strawberry mochi is now ready to be enjoyed! Serve them as a delightful dessert or snack.

Notes

  • Store leftover mochi in an airtight container in the refrigerator for up to 2 days.
  • Mochi can be frozen for up to 1 month. Wrap each mochi individually and store in an airtight container.
  • If the mochi dough is too sticky, dust your hands and the dough with more glutinous rice flour to help with handling.
  • Experiment with different fruit purees like mango, blueberry, or raspberry to create a variety of flavored mochi.
