Ingredients

2 sheets of puff pastry (thawed if frozen)

1 ½ cups spinach (chopped and cooked, excess water squeezed out)

1 cup ricotta cheese (or feta for stronger flavor)

½ cup mozzarella cheese, shredded

1 egg (for egg wash + 1 extra for the filling)

Salt and pepper to taste

Optional: Sesame seeds for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the spinach, ricotta (or feta), mozzarella, 1 egg, salt, and pepper until everything is well combined.
  3. Roll out one sheet of puff pastry onto a piece of baking paper.
  4. Spread the spinach and cheese mixture evenly over the pastry, leaving a small border around the edges.
  5. Place the second sheet of puff pastry on top and press the edges with a fork to seal the two sheets together.
  6. Use a knife to cut the pastry into square portions.
  7. Brush the top with an egg wash (the second beaten egg).
  8. If desired, sprinkle sesame seeds over the top for extra texture and flavor.
  9. Bake for 25–30 minutes or until the puff pastry is golden and puffed.
