A hearty, flavor-packed wet burrito dish featuring seasoned ground beef, rice, refried beans, and melted cheese, all smothered in rich enchilada sauce for the ultimate comfort meal.

Ingredients

⅔ cup long-grain white rice (uncooked)

1 ⅓ cups water (for rice)

1 pound ground beef (80–90%)

1 yellow onion, diced

3 jalapeños, diced and de-seeded

34 cups red enchilada sauce (store-bought or homemade, divided)

1 (16 oz) can refried beans

2 cups shredded cheese (cheddar or Mexican blend)

6 large tortillas (flour or corn)

Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse rice under cold water until the water runs clear. Add rice and 1 ⅓ cups water to a small pot. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until water is absorbed. Season with salt.
  3. In a large skillet over medium heat, cook the ground beef, onion, and jalapeños until beef is browned and vegetables are softened (7–10 minutes). Drain excess fat and season with salt and pepper.
  4. Stir in ½ cup enchilada sauce to the beef mixture. Spread ¼ cup enchilada sauce over the bottom of a 9×13-inch baking dish.
  5. Lay a tortilla flat, spread refried beans down the center, then top with 2 tablespoons cheese, rice, and the beef mixture. Roll tightly and place seam-side down in the baking dish. Repeat with remaining tortillas.
  6. Pour remaining enchilada sauce over burritos, then sprinkle with remaining cheese.
  7. Bake for 15 minutes, or until cheese is melted and sauce is bubbling.
  8. Serve hot, spooning extra sauce from the pan over the top.

Notes

  • For spicier burritos, keep some jalapeño seeds or add chili powder to the filling.
  • Add an extra cup of enchilada sauce for a saucier dish.
  • For a vegetarian version, replace beef with black beans or roasted vegetables.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the oven at 350°F for 15–20 minutes or in the microwave for 2–3 minutes.
