Ingredients
6 hard boiled eggs
¼ cup mayonnaise
1 teaspoon dijon mustard or yellow mustard
⅛ teaspoon black pepper
1 teaspoon paprika (plus more for garnish)
Salt to taste
Chives, snipped, for the stems
Instructions
- Carefully peel the hard boiled eggs and pat dry with paper towels.
- Slice the eggs in half lengthwise and gently remove the yolks into a bowl.
- Mash the yolks with a fork until smooth.
- Add mayonnaise, mustard, pepper, and paprika to the yolks and mix until creamy. Add salt to taste.
- Transfer the yolk mixture to a piping bag fitted with a round tip, or use a spoon to fill the egg white halves.
- Use a toothpick to draw vertical lines on the yolk filling to mimic a pumpkin shape.
- Top each egg with a piece of snipped chive to resemble a pumpkin stem.
- Lightly dust the tops with additional paprika for color and flavor.
Notes
- Add cayenne or hot sauce for a spicy kick.
- Replace half the mayonnaise with mashed avocado for a different flavor and color.
- Fresh herbs like dill or parsley can add extra flavor to the filling.
- Smoked paprika adds a deeper, smokier flavor.
- Best consumed within 1-2 days for optimal freshness.
- Store components separately if making ahead.
