Ingredients

6 hard boiled eggs

¼ cup mayonnaise

1 teaspoon dijon mustard or yellow mustard

⅛ teaspoon black pepper

1 teaspoon paprika (plus more for garnish)

Instructions

  1. Carefully peel the hard boiled eggs and pat dry with paper towels.
  2. Slice the eggs in half lengthwise and gently remove the yolks into a bowl.
  3. Mash the yolks with a fork until smooth.
  4. Add mayonnaise, mustard, pepper, and paprika to the yolks and mix until creamy. Add salt to taste.
  5. Transfer the yolk mixture to a piping bag fitted with a round tip, or use a spoon to fill the egg white halves.
  6. Use a toothpick to draw vertical lines on the yolk filling to mimic a pumpkin shape.
  7. Top each egg with a piece of snipped chive to resemble a pumpkin stem.
