This protein cookie dough is a quick, easy, and healthy treat that satisfies sweet cravings while providing a boost of protein. It’s vegan, gluten-free, and refined sugar-free, making it a guilt-free indulgence.

  • Total Time: 10 minutes
  • Yield: 8 servings

Ingredients

1 cup almond flour

½ cup vanilla protein powder

¼ cup unsalted creamy peanut butter

¼ cup maple syrup

¼ cup non-dairy milk (more as needed)

1 teaspoon vanilla

⅔ cup chocolate chips

Instructions

  1. Whisk together the almond flour and protein powder in a bowl.
  2. Microwave the peanut butter for about 20 seconds, just enough to melt it slightly to make it easier to mix.
  3. Add the peanut butter, maple syrup, non-dairy milk, and vanilla to the bowl with the flour and protein powder mixture.
  4. Mix everything together using a rubber spatula until well combined. Add 1-2 more tablespoons of milk if the mixture is too thick.
  5. Fold in the chocolate chips.
  6. You can either leave the dough as it is or roll it into balls for easy, bite-sized servings.
  7. Store in the fridge for the best results.

Notes

  • Use your preferred protein powder, though vanilla flavor works best.
  • Substitute peanut butter with almond, cashew, or sunflower seed butter for variation.
  • Opt for dark chocolate chips or cacao nibs for a healthier version.
  • For a sugar-free version, replace maple syrup with a sugar-free sweetener and use sugar-free chocolate chips.
  • This dough is best stored in the fridge and will firm up slightly when chilled.
