Oven-roasted cauliflower is a quick and easy side dish that brings out the vegetable’s natural sweetness and crunch. With a perfect balance of oil, butter, and seasoning, this recipe makes a versatile and delicious addition to any meal.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

1 medium cauliflower, sliced into small florets or 1/2” thick steaks

2 Tbsp olive oil

2 Tbsp unsalted butter, melted

½ tsp garlic powder

½ tsp salt, or to taste

¼ tsp ground paprika

¼ tsp ground black pepper, or to taste

Instructions

  1. Preheat your oven to 425˚F and line a baking sheet with parchment paper.
  2. Slice the cauliflower into 1/2″ thick steaks, and then break up the wedges into even, bite-sized florets.
  3. Place the cauliflower on the center of the baking sheet. Drizzle with olive oil and melted butter, then toss to coat evenly.
  4. In a small bowl, combine the garlic powder, salt, paprika, and pepper. Sprinkle this seasoning mix over the cauliflower and toss again to ensure an even coating.
  5. Spread the cauliflower in a single layer on the baking sheet. Bake for 15-20 minutes at 425˚F, or until the cauliflower reaches your desired level of crispiness.

Notes

  • For a vegan option, replace the butter with additional olive oil or a plant-based butter substitute.
  • For cheesy roasted cauliflower, sprinkle with grated Parmesan cheese or your favorite cheese after baking.
  • For a spicier version, add cayenne pepper or chili powder to the seasoning mix.
  • Fresh herbs like thyme, rosemary, or parsley can be added before roasting for a fragrant twist.
