This One Pot Lasagna Soup combines all the rich, cheesy, and hearty flavors of classic lasagna in an easy, comforting soup form. Perfect for quick dinners and meal prep, it’s made in just one pot with basic pantry ingredients.

Ingredients

1 lb ground beef or Italian sausage

1 medium onion, chopped

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups chicken or vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

1 bay leaf

8 oz lasagna noodles, broken into pieces

2 cups ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef or Italian sausage, breaking it up with a spoon as it cooks.
  2. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.
  3. Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine.
  4. Add oregano, basil, and bay leaf. Season with salt and pepper. Bring the mixture to a boil.
  5. Once boiling, add the broken lasagna noodles. Reduce the heat and simmer for about 10 minutes or until noodles are tender.
  6. Stir in the ricotta cheese until the soup becomes creamy. Add half the mozzarella and Parmesan cheese, stirring until melted.
  7. Taste and adjust seasoning if necessary.
  8. Remove the bay leaf and serve hot. Top each bowl with the remaining mozzarella, Parmesan, and fresh basil if desired.

Notes

For a lighter version, use ground turkey or chicken.

Make it gluten-free by using gluten-free lasagna noodles.
