Ingredients
450 g baby potatoes, halved or quartered
225 g green beans, washed and trimmed
1 small yellow onion, sliced or cut into wedges (approx. 1 cup)
450 g pre-cooked andouille sausage or kielbasa, cut into 2.5 cm slices on the bias
60 ml olive oil
5 g garlic powder
5 g salt
5 g Italian seasoning blend
2.5 g ground black pepper
1 tablespoon fresh parsley, chopped, for serving
Instructions
- Slice the baby potatoes into halves or quarters, depending on their size. Wash and trim the green beans. Cut the yellow onion into wedges or thin slices. Slice the sausage into 2.5 cm pieces on the bias.
- In a small bowl, combine garlic powder, salt, Italian seasoning blend, and ground black pepper. Set aside.
- Add the potatoes, green beans, onion, and sausage to a large mixing bowl.
- Pour the olive oil over the sausage and vegetables, then sprinkle with the seasoning mix. Stir everything thoroughly to ensure the ingredients are evenly coated.
- Line a baking tray with parchment paper. Spread the sausage and vegetable mixture out in a single, even layer.
- Roast in a preheated oven at 205°C for 30-40 minutes, stirring halfway through the cooking time, until the potatoes are tender and the vegetables are lightly browned.
- Once cooked, transfer the dish to plates and garnish with freshly chopped parsley before serving.

- Feel free to swap in other vegetables like bell peppers, carrots, or zucchini for extra nutrition.
- For more heat, add a pinch of red pepper flakes or use spicy sausage .
