Meatloaf Mixture
- 1 lb ground chuck
- 1 lb lean ground beef
- 1 cup finely chopped onion
- 1/2 cup finely chopped green pepper
- 2 eggs
- 1 cup bread crumbs
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup
- 1 tsp salt
- 1 tsp pepper
Sauce
- 1/2 cup ketchup
- 3 tbsp brown sugar
- 2 tsp yellow mustard
Instructions
- Preheat oven: Set your oven to 350°F and lightly spray two 12-cup muffin pans with cooking oil to prevent sticking.
- Prepare meatloaf mixture: In a large bowl, gently combine the ground chuck, lean ground beef, finely chopped onions, green pepper, eggs, bread crumbs, Worcestershire sauce, 1/2 cup ketchup, salt, and pepper. Optionally, sauté the onions and green pepper in olive oil beforehand for a more tender texture. The mixture should fill about 18 muffin cups, mounding slightly over the top.
- Bake the meatloaf muffins: Spoon the meat mixture into the prepared muffin cups. Place the pans into the oven and bake for 25 minutes.
- Prepare the sauce: While the meatloaf is baking, mix together the sauce ingredients: 1/2 cup ketchup, brown sugar, and yellow mustard in a small bowl until well combined.
- Add sauce and continue baking: After the initial 25 minutes, remove the muffin pans from the oven and spread the prepared sauce evenly on top of each meatloaf muffin. Return the pans to the oven and bake for an additional 10 minutes.
- Rest and serve: Remove the meatloaf muffins from the oven and let them rest for 15 minutes before removing from the pans and serving. This allows juices to redistribute, ensuring moist meatloaf.
