Instructions

  2. Prepare meatloaf mixture: In a large bowl, gently combine the ground chuck, lean ground beef, finely chopped onions, green pepper, eggs, bread crumbs, Worcestershire sauce, 1/2 cup ketchup, salt, and pepper. Optionally, sauté the onions and green pepper in olive oil beforehand for a more tender texture. The mixture should fill about 18 muffin cups, mounding slightly over the top.
