Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together butter and brown sugar until light and fluffy, about 2–3 minutes.
- Add maple syrup, egg, and vanilla extract. Beat until well combined.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes, until edges are golden and centers are set. Cool on baking sheet for a few minutes, then transfer to a wire rack.
- For icing: In a small saucepan, melt butter over medium heat. Cook until golden brown and nutty, about 4–5 minutes.
- Remove from heat and stir in powdered sugar, maple syrup, and cinnamon (if using). Add milk gradually until icing reaches desired consistency.
- Drizzle icing over cooled cookies and sprinkle with flaky sea salt or chopped pecans.
Notes
- For a vegan version, use dairy-free butter and a flax egg (1 tbsp flaxseed + 3 tbsp water).
- For nut-free cookies, omit pecans.
- Add spices like nutmeg or ginger for extra flavor.
- Chill dough before baking to prevent excessive spreading.
- Cookies can be frozen without icing for up to 3 months.
