Lemon Pistachio Bars are a delightful twist on the classic lemon bars, combining tangy lemon with buttery pistachios. The pistachio-infused crust and zesty lemon filling make these bars a perfect treat for any occasion.

Ingredients

1 cup (125g) all-purpose flour, spooned and leveled

¼ cup (30g) powdered sugar

¼ teaspoon salt

½ cup (113g) unsalted butter, cut into small cubes (about 20 pieces)

¼ cup (35g) finely chopped shelled pistachios

2 large eggs

1¼ cups (250g) granulated sugar

3 tablespoons (26g) all-purpose flour

½ teaspoon baking powder

Finely grated zest of 2 medium-sized lemons (about 1½ tablespoons)

⅓ cup (78 ml) freshly squeezed lemon juice

½ teaspoon vanilla extract

¼ cup (35g) coarsely chopped shelled pistachios

Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment paper or foil and lightly grease it.
  2. In the bowl of a stand mixer, combine the flour, powdered sugar, and salt. Add the cubed butter and mix until the butter is broken into small, pea-sized pieces.
  3. Stir in the chopped pistachios. Press the mixture into the bottom of the prepared pan using the bottom of a glass or measuring cup (if the dough is sticky, place a piece of parchment paper over it before pressing).
  4. Bake for 15-20 minutes, or until the edges begin to turn light brown. While the crust is baking, prepare the filling.
  5. In a medium bowl, whisk together the eggs, sugar, flour, baking powder, lemon zest, lemon juice, and vanilla until smooth.
  6. Stir in the coarsely chopped pistachios.
  7. Pour the filling over the pre-baked crust, ensuring the pistachios are evenly distributed.
  8. Bake for another 20 minutes, or until the filling is set.
  9. Let the bars cool on a wire rack. Once cooled, dust with powdered sugar before serving.

Notes

  • If you don’t have pistachios, substitute with other nuts like almonds or walnuts for a different flavor.
  • For a gluten-free version, use a gluten-free flour blend instead of all-purpose flour.
  • Store the bars in the refrigerator for up to 3 days in an airtight container.
