Ingredients
1 cup (125g) all-purpose flour, spooned and leveled
¼ cup (30g) powdered sugar
¼ teaspoon salt
½ cup (113g) unsalted butter, cut into small cubes (about 20 pieces)
¼ cup (35g) finely chopped shelled pistachios
2 large eggs
1¼ cups (250g) granulated sugar
3 tablespoons (26g) all-purpose flour
½ teaspoon baking powder
Finely grated zest of 2 medium-sized lemons (about 1½ tablespoons)
⅓ cup (78 ml) freshly squeezed lemon juice
½ teaspoon vanilla extract
¼ cup (35g) coarsely chopped shelled pistachios
Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment paper or foil and lightly grease it.
- In the bowl of a stand mixer, combine the flour, powdered sugar, and salt. Add the cubed butter and mix until the butter is broken into small, pea-sized pieces.
- Stir in the chopped pistachios. Press the mixture into the bottom of the prepared pan using the bottom of a glass or measuring cup (if the dough is sticky, place a piece of parchment paper over it before pressing).
- Bake for 15-20 minutes, or until the edges begin to turn light brown. While the crust is baking, prepare the filling.
- In a medium bowl, whisk together the eggs, sugar, flour, baking powder, lemon zest, lemon juice, and vanilla until smooth.
- Stir in the coarsely chopped pistachios.
- Pour the filling over the pre-baked crust, ensuring the pistachios are evenly distributed.
- Bake for another 20 minutes, or until the filling is set.
- Let the bars cool on a wire rack. Once cooled, dust with powdered sugar before serving.
Notes
- If you don’t have pistachios, substitute with other nuts like almonds or walnuts for a different flavor.
- For a gluten-free version, use a gluten-free flour blend instead of all-purpose flour.
- Store the bars in the refrigerator for up to 3 days in an airtight container.
- Freeze the bars for up to 3 months, wrapped in plastic wrap and stored in an airtight container. Thaw before serving.
- If desired, add a pinch of cinnamon or cardamom to the crust for extra flavor.
- If you prefer a stronger lemon flavor, add more zest to the filling.
