A delightful combination of tender chicken, pillowy gnocchi, and a creamy lemon parmesan sauce, ready in about 30 minutes.

Ingredients

2 large chicken breasts

1/2 teaspoon garlic powder

1 teaspoon lemon pepper seasoning

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1/2 cup chicken broth

1 tablespoon lemon juice

1 cup heavy/whipping cream

1 pound uncooked potato gnocchi

1/2 cup freshly grated parmesan cheese

2 cups fresh baby spinach

Salt & pepper to taste

Instructions

  1. Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Season both sides with garlic powder and lemon pepper, adding a pinch of salt if needed.
  2. Heat the olive oil and butter in a skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.
  3. Lower the heat to medium and add minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
  4. Stir in chicken broth and lemon juice, scraping up any brown bits from the pan.
  5. Pour in the cream and add the uncooked gnocchi. Stir to ensure gnocchi is submerged. Simmer uncovered for 5-7 minutes, stirring occasionally.
  6. Once the gnocchi is cooked and the sauce thickens, remove from heat. Stir in parmesan cheese and fresh spinach until spinach wilts.
  7. Return the cooked chicken to the skillet, adding any juices. Spoon sauce over the chicken and season with salt and pepper.
  8. Serve immediately and enjoy!

  • If using pre-cooked gnocchi, adjust the cooking time.
  • Add a teaspoon of lemon zest for a stronger lemon flavor.
