Lasagna Roll-Ups are a fun twist on classic lasagna, featuring tender pasta noodles rolled with a creamy three-cheese filling and a rich beefy marinara sauce, baked to golden perfection in easy-to-serve portions.

Ingredients

12 lasagna noodles, cooked

1 lb ground beef (85% lean)

24 oz marinara sauce

1/2 cup diced onion

3 cloves garlic, minced

1 tsp sea salt (or to taste)

1/2 tsp black pepper (or to taste)

1/2 tsp dried oregano

15 oz ricotta cheese

1 large egg

1/4 cup shredded Parmesan cheese

3 cups shredded mozzarella cheese, divided

1/4 cup chopped parsley, plus more for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles until al dente, drain, and keep in cold water to prevent sticking.
  3. Prepare the meat sauce: In a skillet, brown the ground beef, then add onion, garlic, salt, pepper, and oregano; cook briefly. Stir in marinara sauce and simmer for a few minutes.
  4. Spread 1/2 cup of meat sauce in the bottom of a casserole dish.
  5. Make the cheese filling: In a bowl, combine ricotta, egg, Parmesan, 1 1/2 cups mozzarella, and parsley.
  6. Lay noodles flat on a baking sheet. Spread about 1/4 cup cheese mixture across each noodle, then add a heaping tablespoon of meat sauce down the center. Roll up each noodle and place seam-side down in the casserole dish.
  7. Top with remaining meat sauce and the remaining 1 1/2 cups mozzarella. Cover loosely with foil, using toothpicks if needed to prevent foil from touching the cheese.
  8. Bake covered for about 40 minutes. Remove foil and broil for 2–3 minutes until cheese is golden.
  9. Garnish with additional parsley and serve hot.

Notes

  • Cook 2–3 extra noodles in case any break during boiling.
  • Substitute ground turkey, chicken, or sausage for beef if desired.
  • Vegetarian option: Use mushrooms, spinach, zucchini, or lentils instead of meat.
  • Freezer-friendly: Freeze baked or unbaked roll-ups for up to 3 months.
  • To prevent cheese from sticking to foil, tent it or use toothpicks to elevate.
