Ingredients
12 lasagna noodles, cooked
1 lb ground beef (85% lean)
24 oz marinara sauce
1/2 cup diced onion
3 cloves garlic, minced
1 tsp sea salt (or to taste)
1/2 tsp black pepper (or to taste)
1/2 tsp dried oregano
15 oz ricotta cheese
1 large egg
1/4 cup shredded Parmesan cheese
3 cups shredded mozzarella cheese, divided
1/4 cup chopped parsley, plus more for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles until al dente, drain, and keep in cold water to prevent sticking.
- Prepare the meat sauce: In a skillet, brown the ground beef, then add onion, garlic, salt, pepper, and oregano; cook briefly. Stir in marinara sauce and simmer for a few minutes.
- Spread 1/2 cup of meat sauce in the bottom of a casserole dish.
- Make the cheese filling: In a bowl, combine ricotta, egg, Parmesan, 1 1/2 cups mozzarella, and parsley.
- Lay noodles flat on a baking sheet. Spread about 1/4 cup cheese mixture across each noodle, then add a heaping tablespoon of meat sauce down the center. Roll up each noodle and place seam-side down in the casserole dish.
- Top with remaining meat sauce and the remaining 1 1/2 cups mozzarella. Cover loosely with foil, using toothpicks if needed to prevent foil from touching the cheese.
- Bake covered for about 40 minutes. Remove foil and broil for 2–3 minutes until cheese is golden.
- Garnish with additional parsley and serve hot.
Notes
- Cook 2–3 extra noodles in case any break during boiling.
- Substitute ground turkey, chicken, or sausage for beef if desired.
- Vegetarian option: Use mushrooms, spinach, zucchini, or lentils instead of meat.
- Freezer-friendly: Freeze baked or unbaked roll-ups for up to 3 months.
- To prevent cheese from sticking to foil, tent it or use toothpicks to elevate.
