1/4 cup salted butter, softened
2 large egg whites
2 cups almond flour
1/4 teaspoon salt (plus more for sprinkling)
Optional: 1 teaspoon Italian seasoning or herbs/spices of choice
Instructions
- Preheat your oven to 350°F (177°C).
- In a large mixing bowl, use an electric hand mixer on low-medium speed to combine softened butter and almond flour.
- Add egg whites and a pinch of salt. Continue mixing until the dough is smooth and uniform.
- If desired, mix in 1 teaspoon of Italian seasoning or other herbs/spices.
- Roll the dough out evenly to about ⅛ inch thickness.
- Cut the dough into 1½ inch squares using a knife or pizza cutter.
- Lightly sprinkle the top of the dough with salt.
- Transfer the crackers to a baking sheet.
- Bake for 10–15 minutes or until lightly golden brown.
- Let the crackers cool completely before serving or storing.
Notes
For extra flavor, mix in herbs like dill, rosemary, or thyme.
Add a pinch of cayenne or red pepper flakes for a spicy version.
Top with sesame, poppy, or flax seeds before baking.
Store in an airtight container at room temperature for up to one week.
To restore crispiness, bake in a 300°F (150°C) oven for 3–5 minutes.
