Ingredients
4 cups hulled and halved strawberries (about 1 pound)
6 cups cold water, divided
½ cup honey or agave nectar (adjust to taste, up to 1 cup)
2 medium-size lemons, cut into wedges
Optional garnishes: whole strawberries, lemon slices, fresh mint, or lemon balm sprigs
Instructions
- In the basin of the blender, add the strawberries, 3 cups of cold water, and the honey or agave nectar. Blend until smooth. Adjust sweetness if needed.
- Pour the strawberry puree mixture into a large pitcher.
- Add the lemon wedges and the remaining 3 cups of water into the blender. Blend until the lemon is mostly chopped.
- Strain the mixture through a fine-mesh strainer to remove any pulp.
- Pour the strained lemon juice into the pitcher with the strawberry mixture and stir well to combine.
- Serve over ice in glasses and garnish with lemon slices, whole strawberries, or fresh herbs like mint or lemon balm, if desired.
Notes
- If using frozen strawberries, let them thaw completely and reserve the juice.
- For a more tart version, increase the amount of lemon or use limes instead of lemons.
- Sweeteners can be adjusted to taste, using maple syrup or stevia as alternatives to honey or agave nectar.
- For a sugar-free version, use stevia or monk fruit sweetener.
- This recipe can be made ahead of time and stored in the refrigerator for up to 3 days.
