Instructions
- In a bowl, mix together the dry ingredients: plain breadcrumbs, panko breadcrumbs, salt, sugar (if using), paprika, onion powder, garlic powder, Italian seasoning, and black pepper.
- Add the oil to the dry mixture and stir until the texture resembles damp sand.
- Transfer the mixture to an airtight container and store it in the freezer for up to 3 months or in the fridge for up to 2 weeks.
- To use the mix, pat your chosen protein (chicken or fish) dry with a paper towel.
- Brush the meat with mayo, mustard, or buttermilk.
- Sprinkle the shake and bake mix over the protein and gently press it down to ensure the coating adheres.
- Optionally, spritz the coated meat with a little more oil for extra crispiness.
- Place the protein on a baking sheet and bake at 375°F until fully cooked.
