This homemade shake and bake mix is an easy and flavorful way to achieve a crispy, golden coating for your favorite protein. No flour required, healthier, customizable, and free of additives.

Ingredients

1 cup plain dry breadcrumbs

½ cup panko breadcrumbs

1 Tbsp salt

1 Tbsp sugar (optional)

1½ tsp paprika

2 tsp onion powder

1 tsp garlic powder

1 tsp Italian seasoning

½ tsp black pepper

¼ cup avocado oil or vegetable oil

Instructions

  1. In a bowl, mix together the dry ingredients: plain breadcrumbs, panko breadcrumbs, salt, sugar (if using), paprika, onion powder, garlic powder, Italian seasoning, and black pepper.
  2. Add the oil to the dry mixture and stir until the texture resembles damp sand.
  3. Transfer the mixture to an airtight container and store it in the freezer for up to 3 months or in the fridge for up to 2 weeks.
  4. To use the mix, pat your chosen protein (chicken or fish) dry with a paper towel.
  5. Brush the meat with mayo, mustard, or buttermilk.
  6. Sprinkle the shake and bake mix over the protein and gently press it down to ensure the coating adheres.
  7. Optionally, spritz the coated meat with a little more oil for extra crispiness.
  8. Place the protein on a baking sheet and bake at 375°F until fully cooked.
