Ingredients
1 cup Greek yogurt (or coconut yogurt for dairy-free)
1/4 cup creamy peanut butter
2 tbsp honey or maple syrup
1/2 tsp vanilla extract
1 cup dark chocolate, melted
1 tbsp coconut oil (for smoother chocolate)
Crushed peanuts or sea salt for garnish
Instructions
- Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
- Mold the Mixture: Spoon the yogurt mixture into silicone molds or ice cream bar molds, filling them about 3/4 full. Insert sticks into the center of each mold and freeze for at least 4 hours, or until completely solid.
- Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Dip the Frozen Bars: Once the yogurt bars are frozen, carefully remove them from the molds. Dip each bar into the melted chocolate, allowing any excess to drip off.
- Garnish and Serve: Place the chocolate-coated bars on a parchment-lined baking sheet. Sprinkle with crushed peanuts or a pinch of sea salt for an extra touch. Return to the freezer for about 15 minutes to set the chocolate.
- Enjoy: Serve these delightful Healthy Peanut Butter & Chocolate Magnums straight from the freezer for a refreshing and satisfying treat!
Notes
- Storage: Keep the bars in an airtight container in the freezer for up to 2 weeks.
- Vegan Version: Use coconut yogurt and maple syrup to make this recipe vegan-friendly. Ensure your chocolate is dairy-free as well.
- Crunchy Add-Ins: Add in chopped almonds, cashews, or other nuts for an extra crunch inside the yogurt mixture before freezing.
- Flavored Yogurt: Try using flavored Greek yogurt, like vanilla or strawberry, to alter the taste.
- Reheating: These bars are best enjoyed straight from the freezer. Do not attempt to heat them, as they will lose their texture.
