Chicken and Coating
- 600 g chicken breast, cut into strips
- 200 g cornflakes
- 3 tbsp flour
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika
- 2 eggs
- Vegetable oil spray (2-4 sprays per chicken strip)
- Flaky salt, to season
Wrap and Salad
- 1 round lettuce
- 6 salad tomatoes, thinly sliced
- 8 small white wraps or 4 large wraps
- 200 g cheesy singles (cheese slices)
- 1 red onion, thinly sliced
Instructions
- Preheat Airfryer: Preheat your air fryer to 200°C (390°F) to ensure it’s hot and ready for cooking the chicken strips to a perfect crisp.
- Prepare Ingredients: Slice chicken breasts into strips and pat dry with a paper towel to remove excess moisture for better coating adhesion. Prepare the salad ingredients by washing and slicing lettuce, tomatoes, and red onion.
- Crush Cornflakes: Place cornflakes into a ziplock bag over a chopping board. Use a rolling pin or bottle to crush the cornflakes into a coarse breadcrumb texture, which will form the crispy coating.
- Set up Breading Stations: On one plate, add the flour seasoned with flaky salt. Whisk eggs in a second plate. On a third plate, combine the crushed cornflakes with onion powder, garlic powder, and paprika for the seasoning.
- Bread the Chicken: Coat each chicken strip first in the seasoned flour, then dip into the whisked eggs, and finally press into the seasoned cornflake mixture to thoroughly coat. Place the breaded strips on a tray.
- Air Fry Chicken: Spray the breaded chicken strips lightly with vegetable oil spray. Arrange them in the air fryer basket ensuring they don’t overlap for maximum crispiness. Cook at 200°C (390°F) for 5 minutes, then flip and cook for an additional 5 minutes until golden and crispy.
- Season Chicken: After cooking, season the chicken strips generously with flaky salt to enhance flavor.
- Assemble Wrap: Take one large tortilla wrap, lay a layer of lettuce, sliced tomatoes, red onion, and 2 slices of cheese. Top with several crispy chicken strips (goujons), then fold or roll up the wrap.
Notes
- For extra crispiness, avoid overlapping the chicken strips when air frying.
- You can swap the cheesy singles for your favorite cheese type or make it dairy-free if preferred.
- Adjust the seasoning in the coating to your taste, adding chili powder for a spicy kick.
- If you don’t have an air fryer, the chicken strips can be baked in an oven at 200°C (390°F) for 15-20 minutes, flipping halfway.
- Use fresh vegetables for the wrap to add crunch and freshness.
