Ingredients
1 French baguette
2 ripe peaches
8 oz burrata cheese
2 tbsp extra virgin olive oil
1/4 cup fresh basil leaves
2 tbsp balsamic glaze
Instructions
- Preheat your grill or grill pan over medium heat.
- Slice the baguette into 1-inch thick pieces and brush both sides lightly with olive oil.
- Grill baguette slices until golden and crisp, about 2 minutes per side.
- Halve the peaches and remove the pits. Grill cut-side down for around 4 minutes or until charred and caramelized.
- Tear the burrata into pieces.
- Assemble each crostini by placing a spoonful of burrata on each grilled bread slice, then top with slices of grilled peach.
- Garnish with torn basil leaves and a generous drizzle of balsamic glaze.
- Serve immediately while the crostini are still slightly warm.
Notes
- Swap basil for mint or thyme for a different herbal note.
- Use ricotta or goat cheese instead of burrata for a tangier bite.
- Add crushed red pepper flakes or hot honey for a spicy twist.
- Try nectarines, plums, or figs instead of peaches for variety.
