Ingredients

1 French baguette

2 ripe peaches

8 oz burrata cheese

2 tbsp extra virgin olive oil

1/4 cup fresh basil leaves

2 tbsp balsamic glaze

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the baguette into 1-inch thick pieces and brush both sides lightly with olive oil.
  3. Grill baguette slices until golden and crisp, about 2 minutes per side.
  4. Halve the peaches and remove the pits. Grill cut-side down for around 4 minutes or until charred and caramelized.
  5. Tear the burrata into pieces.
  6. Assemble each crostini by placing a spoonful of burrata on each grilled bread slice, then top with slices of grilled peach.
  7. Garnish with torn basil leaves and a generous drizzle of balsamic glaze.
  8. Serve immediately while the crostini are still slightly warm.
