Potatoes
- 1.2 kg / 2.5 lb potatoes (Aus: Desiree, US: Yukon Gold, UK: Maris Piper)
Roasting Sauce
- 1 1/2 cups low sodium chicken stock/broth
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 5 garlic cloves, finely grated using microplane
- 1 tbsp dried oregano
- 2 tsp salt

- Fresh oregano leaves
Instructions
- Preheat oven: Preheat your oven to 200°C/390°F (180°C fan).
- Cut potatoes: Peel the potatoes and cut the large ones into thick wedges about 3cm (1.2 inches) thick. Medium potatoes should be cut into 3 pieces.
- Coat potatoes: Place the cut potatoes into a roasting pan. Add the chicken stock, olive oil, lemon juice, finely grated garlic, dried oregano, and salt. Toss everything well to ensure the potatoes are evenly coated with the mixture.
- Roast first phase: Roast the potatoes for 20 minutes. Then turn the potatoes and roast for an additional 25 to 30 minutes until most of the liquid has been absorbed or evaporated, leaving mainly oil in the pan.
- Crisp the potatoes (optional): Transfer the potatoes to a separate tray. Tilt the original roasting pan and scoop off excess oil (retain some juices). Drizzle the remaining oil and juices over the potatoes on the separate tray.
- Roast second phase: Return the potatoes to the oven and roast for 35 to 40 minutes, turning once or twice, until the potatoes develop a golden color and edges become slightly crispy.
- Reduce pan juices (optional): Place the original pan with garlic juices back in the oven for the last 5 to 10 minutes to reduce the liquid and allow the garlic to turn golden for extra flavor.
- Serve: Transfer potatoes to a serving platter. Drizzle the reduced garlic pan juices over the potatoes or toss the potatoes in the pan. Garnish with fresh lemon wedges and oregano leaves before serving.
