Ingredients
¼ cup ghee or butter, divided
1 Tbsp olive oil
1 lb Yukon Gold potatoes, cut into ½-inch cubes
3 garlic cloves, minced
1 tsp dried thyme
½ tsp dried oregano
½ tsp sea salt, plus more to taste
¼ tsp ground black pepper, plus more to taste
1¼ lb sirloin steak, cut into ½-inch cubes

Prep: Heat a large cast-iron or heavy skillet over medium heat. Add olive oil and 2 Tbsp ghee or butter.

Cook Potatoes: Once melted, add potatoes. Season with garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes, then stir every 1–2 minutes until golden brown and fork-tender (6–8 minutes total). Transfer potatoes and browned bits to a bowl.

Sear Steak: Increase heat to medium-high. Add remaining 2 Tbsp ghee or butter, then steak cubes. Season with salt and pepper. Sear for 2 minutes before stirring, then cook another 1–2 minutes until browned.

Combine: Return potatoes to skillet and stir to combine. Adjust seasoning if needed.

Serve: Garnish with freshly chopped parsley and serve immediately.
