A quick and delicious one-pan dish featuring tender cubes of sirloin steak and golden, seasoned Yukon Gold potatoes, all coated in aromatic garlic butter. Ready in under 30 minutes, it’s perfect for busy weeknights.

Ingredients

¼ cup ghee or butter, divided

1 Tbsp olive oil

1 lb Yukon Gold potatoes, cut into ½-inch cubes

3 garlic cloves, minced

1 tsp dried thyme

½ tsp dried oregano

½ tsp sea salt, plus more to taste

¼ tsp ground black pepper, plus more to taste

lb sirloin steak, cut into ½-inch cubes

Optional: chopped parsley for garnish

Instructions

    • ¼ cup ghee or butter, divided

    • 1 Tbsp olive oil

    • 1 lb Yukon Gold potatoes, cut into ½-inch cubes

    • 3 garlic cloves, minced

    • 1 tsp dried thyme

    • ½ tsp dried oregano

    • ½ tsp sea salt, plus more to taste

    • ¼ tsp ground black pepper, plus more to taste

    • 1¼ lb sirloin steak, cut into ½-inch cubes

    • Optional: chopped parsley for garnish

Notes

    • Prep: Heat a large cast-iron or heavy skillet over medium heat. Add olive oil and 2 Tbsp ghee or butter.

    • Cook Potatoes: Once melted, add potatoes. Season with garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes, then stir every 1–2 minutes until golden brown and fork-tender (6–8 minutes total). Transfer potatoes and browned bits to a bowl.

    • Sear Steak: Increase heat to medium-high. Add remaining 2 Tbsp ghee or butter, then steak cubes. Season with salt and pepper. Sear for 2 minutes before stirring, then cook another 1–2 minutes until browned.

    • Combine: Return potatoes to skillet and stir to combine. Adjust seasoning if needed.

    • Serve: Garnish with freshly chopped parsley and serve immediately.
