Ingredients
1 cup sugar
1 cup heavy cream
1/2 cup salted butter
1 teaspoon vanilla extract or vanilla bean paste
1/4 teaspoon baking soda
Instructions
- In a heavy-bottomed saucepan, combine the sugar, heavy cream, butter, and vanilla extract.
- Heat over medium heat, stirring constantly with a wooden spoon, until the mixture begins to boil gently.
- Reduce the heat to a simmer and continue to stir for about 5-10 minutes, or until the syrup thickens.
- Just before removing from the heat, stir in the baking soda until fully dissolved. The mixture will bubble up slightly due to the baking soda.
- Serve immediately over your favorite breakfast treats, or allow the syrup to cool and store it in the refrigerator for later use.
Notes
- If you prefer a more natural, woodsy flavor, substitute the sugar with maple syrup.
- Add a pinch of sea salt for a salted caramel variation.
- For a spiced variation, stir in 1 teaspoon of ground cinnamon.
- Store the syrup in an airtight container in the fridge for up to a week. It can also be frozen for up to 3 months.
- To reheat, gently warm it in the microwave or on the stove over low heat.
