Ingredients
Filling
- 2 cups cooked chicken, shredded (rotisserie chicken works great!)
- 2 cups shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, chopped
- 1/2 cup barbecue sauce (your favorite kind)
Wraps
- 4-5 large flour tortillas
- 2 Tablespoons oil (vegetable or canola oil)
Instructions
- Prepare the filling: In a mixing bowl, combine the shredded chicken, cheddar cheese, chopped red onion, cilantro, and barbecue sauce. Toss everything together until well mixed, adding additional barbecue sauce if you prefer a saucier filling.
- Assemble the wraps: Lay out a flour tortilla and spread about 1/2 cup of the chicken mixture evenly over it. Start rolling the tortilla from one end while folding in the sides to create a burrito-style wrap, ensuring the filling is enclosed securely.
- Cook the wraps: Heat a skillet over medium-high heat and add enough oil to lightly coat the bottom of the pan, or use cooking spray. Once hot, place the wraps seam side down in the skillet. Cook, turning every 1 to 2 minutes, until the wraps are golden brown and crispy on all sides and the filling is heated through. Serve immediately while warm.
Notes
- You can substitute cooked chicken with leftover grilled chicken or rotisserie chicken.
- If you prefer a spicier kick, add some sliced jalapeños or a drizzle of hot sauce to the filling.
- For a lighter option, use low-fat cheese and whole wheat tortillas.
- Make sure not to overfill the wraps to avoid them breaking during cooking.
- Leftover wraps can be refrigerated for up to 2 days and reheated in a skillet or oven for best texture.
