Ingredients
1 and 1/2 cups medjool dates, packed
1 cup almonds
1 cup walnuts
1/4 cup shredded coconut
1/4 cup cocoa powder
2 tsp vanilla extract
1/4 tsp salt
1–2 tbsp maple syrup (only as needed)
1/3 cup candy-coated chocolate chips
Instructions
- Add medjool dates, almonds, walnuts, shredded coconut, cocoa powder, vanilla extract, and salt to a food processor.
- Blend until a sticky dough forms. If the mixture is too crumbly, add 1–2 tablespoons of maple syrup and blend again until smooth and sticky.
- Transfer the dough to a bowl and fold in the candy-coated chocolate chips.
- Using clean hands, scoop and roll the dough into bite-sized balls.
- Enjoy immediately or refrigerate for later.
Notes
- Substitute almonds and walnuts with sunflower or pumpkin seeds for a nut-free version.
- Omit shredded coconut if preferred.
- Adjust maple syrup to taste for desired sweetness level.
- Store in an airtight container at room temperature for 3 days, in the fridge for 1 week, or freeze for up to 3 months.
