Ingredients
1 stick butter
1¼ cups sugar
¼ cup milk
¼ cup cocoa
1 cup peanut butter
2 teaspoons vanilla extract
Instructions
- In a saucepan over medium heat, melt the butter.
- Add the sugar, milk, and cocoa to the melted butter, stirring frequently. Bring the mixture to a gentle boil and allow it to boil for about 1 minute, stirring constantly.
- Remove the saucepan from heat and mix in the peanut butter and vanilla extract. Stir until smooth and fully combined.
- Drop spoonfuls of the mixture onto a sheet of wax paper or parchment paper. You can shape them into cookies by pressing lightly with a spoon.
- Let the cookies set at room temperature for about 30-60 minutes or until firm. If you’re in a hurry, you can also place them in the fridge to speed up the setting process.
- Enjoy your no-bake cookies once they’ve hardened!
Notes
- For variations, you can swap out peanut butter for other nut butters, add oats, shredded coconut, or mini chocolate chips, or drizzle melted chocolate over the cookies.
- Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate them for up to a week.
- If you prefer a softer texture, you can microwave the cookies for 10-15 seconds before eating.
- These cookies can be frozen for up to 3 months. Simply place them in a single layer on a baking sheet, freeze until firm, then transfer to an airtight container.
