Ingredients
3 ripe bananas
1/3 cup natural peanut butter
1/2 cup dark chocolate chips
2 teaspoons coconut oil
Instructions
- Peel and slice the bananas into rounds, about 1/4 inch thick.
- Line a platter or small baking sheet with parchment paper. Place about 1/2 teaspoon of peanut butter on a banana slice and top with another banana slice to create a sandwich. Repeat until all banana slices are used and you have about 30 bites.
- Arrange the bites on two parchment-lined platters or plates and place them in the freezer for about 1 hour to harden.
- While the bites freeze, melt the chocolate. Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 1 minute, stir, and continue microwaving in 30-second increments until the chocolate is fully melted (no more than 2 minutes).
- Once the banana bites are frozen, remove one platter from the freezer. Dip each bite into the melted chocolate, coating half (or the entire bite). If coating fully, use more chocolate chips.
- Place the chocolate-covered bites back onto the parchment-lined platter and return to the freezer to harden for about 15 minutes.
- Enjoy the bites right away, or store them in a freezer-safe container for later use. Thaw for about 5 minutes before eating if needed.
Notes
- For a different flavor, swap the peanut butter with almond butter, cashew butter, or sunflower seed butter.
- Use milk chocolate or white chocolate for a sweeter variation.
- Sprinkle some chopped nuts, shredded coconut, or mini chocolate chips on top before freezing for extra flavor and texture.
- Drizzle honey or maple syrup on the banana slices before assembling for extra sweetness.
