Ingredients
¾ cup (90g) all-purpose flour
¼ cup (30g) corn starch
1 tablespoon (12g) granulated sugar
½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
⅓ cup vegetable oil
1 large egg
¾ teaspoon vanilla extract
½ cup chocolate chips
Melted butter (optional for serving)
Syrup (optional for serving)
Instructions
- In a large bowl, whisk together flour, corn starch, sugar, baking powder, baking soda, and salt.
- Make a well in the dry ingredients and add buttermilk, vegetable oil, egg, and vanilla extract. Stir until just combined.
- Let the batter rest for 30 minutes.
- Preheat oven to 200°F and place a baking sheet with a cooling rack inside to keep waffles warm.
- After resting, gently fold in chocolate chips.
- Preheat waffle iron and cook batter according to iron’s instructions (about 4–6 minutes per waffle), until golden brown and steam has mostly stopped.
- Transfer cooked waffles to the warm oven while preparing the remaining batter.
- Serve warm with melted butter and syrup, if desired.
Notes
- Resting the batter for 30 minutes improves texture and flavor.
- Keep waffles warm and crispy in a 200°F oven while cooking remaining batter.
- Variations: swap chocolate chips for white or dark chocolate, add nuts, or dried fruit.
- For a vegan version, use non-dairy milk and a flax egg substitute.
- Store leftovers in the fridge for 3 days or freeze up to 3 months.
- Reheat in a toaster or 350°F oven for crispiness.
