Ingredients
2 1/2 cups rolled oats
75 grams dark chocolate chips
6 scoops whey protein powder
2 packets chocolate LMNT electrolytes
1/3 cup pure maple syrup
3/4 cup peanut butter
3/4 cup cottage cheese
Instructions
- In a large bowl, combine the rolled oats, dark chocolate chips, whey protein powder, and electrolytes.
- In a separate bowl, mix together the pure maple syrup, peanut butter, and cottage cheese.
- Add the cottage cheese mixture to the dry ingredients and stir until everything is evenly combined.
- Refrigerate the dough in an airtight container to eat with a spoon, or roll into bite-sized balls.
- If rolling into balls, refrigerate the dough for about 2 hours. Once chilled, dampen your hands lightly with water and roll the dough into 32-gram balls. Alternatively, use a cookie dough scoop.
- Store the cookie dough bites in the fridge for up to one week, or freeze them in an airtight container for up to 3 months. Let frozen bites defrost for 10 minutes before eating.
Notes
- For variations, try swapping peanut butter with almond butter, or using a sugar-free sweetener like stevia or monk fruit instead of maple syrup.
- Make them nut-free by using sunflower seed butter or a similar nut-free alternative.
- Customize with add-ins like cinnamon, vanilla extract, or dried fruit.
