Ingredients
1 lb boneless chicken thigh, cut into bite-sized pieces
1 teaspoon cornstarch
¼ cup light soy sauce
1 teaspoon sesame oil
2 teaspoons sugar (or honey)
1 tablespoon rice wine vinegar (optional)
3 cloves garlic, smashed
1 tablespoon cooking oil
1 medium zucchini, cut in half lengthwise and then sliced
1 tablespoon oyster sauce
Ground black pepper, optional
Instructions
- Cut the chicken into bite-sized pieces. In a mixing bowl, combine all the marinade ingredients. Add the chicken to the marinade and mix well. Let it sit for about 30 minutes to marinate.
- Heat the cooking oil in a pan or wok over medium-high heat.
- Add the garlic and chicken, including the marinade sauce. Stir fry for about 2 minutes or until the chicken is no longer translucent. Once cooked, remove the chicken from the pan and set it aside on a plate or bowl, keeping the sauce in the pan.
- If necessary, add a little more cooking oil to the pan. Add the zucchini and stir fry for about 5 minutes or until the zucchini starts to become tender.
- Return the chicken to the pan, then add the oyster sauce and ground black pepper (if using). Stir fry for another 2-3 minutes or until the chicken is fully cooked and the zucchini is tender.
- Remove from heat and serve immediately. Enjoy!
Notes
- For a gluten-free option, use tamari or coconut aminos instead of soy sauce.
- You can swap the chicken for shrimp, beef, or tofu if preferred.
- To add more variety, try adding bell peppers, carrots, or mushrooms to the stir fry.
- For a spicy twist, include red pepper flakes or hot sauce.
