Ingredients
3 cups chopped romaine lettuce
3 boneless skinless chicken breasts, cooked and cut into 1-inch cubes (about 2 pounds)
1 cup Italian croutons
¾ cup Caesar dressing
½ cup shredded Parmesan cheese
3 flour tortilla wraps (burrito size)
Instructions
- In a large bowl, combine the chopped romaine lettuce, cooked chicken cubes, Caesar dressing, croutons, and Parmesan cheese. Toss everything together until the salad is well coated in the dressing.
- Lay out 3 tortillas on a flat surface. Evenly divide the Caesar salad mixture between each wrap. If you prefer warm tortillas, you can heat them over low heat in a large skillet or follow the microwave instructions on the package to warm them up.
- Fold the right and left sides of each tortilla towards the center. Then, fold the side closest to you away from your body, pulling it tightly into a roll. Use a toothpick if needed to hold the wrap together.
- Cut the wraps in half or serve them whole, chilled or at room temperature, depending on your preference.
Notes
- Leftover wraps can be stored in an airtight container for 1-2 days. Add croutons just before serving to keep them from getting soggy.
- For a healthier version, use low-fat Caesar dressing or a yogurt-based dressing.
- If you prefer warm tortillas, heat them in a skillet or microwave.
