Ingredients

1 pound lean ground beef

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon Worcestershire sauce

1/2 cup mayo

2 Tablespoons grated onion

2 Tablespoons ketchup

1 Tablespoon pickle relish

2 teaspoons yellow mustard

1 teaspoon white vinegar

1/4 teaspoon paprika

4 burrito-sized flour tortillas

16 thinly sliced cheddar cheese

1/2 cup onion, chopped

1/2 cup pickles

1 Tablespoon olive oil

Instructions

  1. Make the Burger Sauce: In a small bowl, whisk together the mayo, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika. Set aside in the fridge until ready to use.
  2. Cook the Beef: In a large skillet, brown the ground beef over medium-high heat, breaking it apart into small pieces. Once fully cooked, drain off any excess grease.
  3. Season the Beef: Sprinkle the beef with salt, pepper, garlic powder, and Worcestershire sauce. Stir to combine and remove from heat.
  4. Assemble the Quesadillas: Place each tortilla on a flat surface. On half of each tortilla, add 2 slices of cheddar cheese, followed by the cooked beef mixture. Top with chopped onions and pickles, then place 2 more slices of cheese on top. Fold the tortillas over to form a quesadilla.
  5. Cook the Quesadillas: Heat a griddle or large skillet over medium-high heat. Add the olive oil and allow it to heat up. Once hot, add the quesadillas and cook for 2-3 minutes on each side until they are golden brown and the cheese has melted.
  6. Serve: Remove the quesadillas from the skillet, slice them into triangles, and serve with the prepared burger sauce.
