Ingredients
1 Tbsp smoked paprika
1 1/2 tsp kosher salt
1 1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp cayenne pepper (or less, to taste)
1/2 tsp packed light brown sugar
1/4 tsp dried thyme
1 1/2 lbs steak (strip steak, sirloin, ribeye, etc.)
2 Tbsp vegetable oil (divided)
3 Tbsp unsalted butter
5 cloves garlic (finely minced or grated)
Minced fresh parsley (for garnish)
Instructions
- Slice the steak into roughly 2-inch pieces and place them in a mixing bowl.
- In a small bowl, combine all the ingredients for the Cajun seasoning blend. Add the seasoning to the steak bites and toss to coat evenly.
- Heat a large, heavy-bottomed cast iron skillet over medium-high heat for several minutes, until you see wisps of smoke.
- Add 1 tablespoon of vegetable oil to the skillet, swirling it to coat the bottom. Add half of the steak bites (or less if your skillet isn’t very large) to the pan. Let them sear for 2 minutes without flipping, then flip and sear for another 2 minutes, or until they are well-browned. Remove the steak from the skillet and set it aside. Repeat with the remaining steak and oil.
- Reduce the heat to medium-low. Without washing the skillet, add the butter and let it melt. Add the minced garlic and cook for about 30 seconds, scraping up any browned bits from the skillet with a wooden spoon.
- Turn off the heat, add the steak bites back to the skillet, and stir well to coat the steak in the garlic butter. Garnish with minced fresh parsley and serve immediately.
Notes
- Steak Cuts: While strip steak, sirloin, or ribeye are ideal for this recipe, you can also use other cuts like flank steak or tenderloin for a different texture.
- Spiciness: Adjust the amount of cayenne pepper to your preference. For a milder version, reduce or omit the cayenne altogether.
- Garlic Butter Twist: For an extra richness, you can add a splash of heavy cream or a tablespoon of Parmesan cheese to the garlic butter sauce.
- Storage: Store leftover steak bites in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat the steak bites in a skillet over medium heat, adding a small amount of butter or oil to prevent them from drying out. Alternatively, you can microwave them in short intervals, stirring between each.
