This Cabbage Roll Skillet is an easy and healthy low-carb dinner featuring savory ground beef, tender cabbage, and melted cheddar cheese. It’s a quick, keto-friendly dish that’s flavorful and family-friendly.

Ingredients

1 lb ground beef

1 yellow onion (chopped)

1 bell pepper (chopped)

1 small head of cabbage (cored & chopped)

1 (14 oz) can diced tomatoes

2 tsp Tony Chachere’s creole seasoning

2 tsp garlic powder

2 tsp smoked paprika

1 tsp black pepper

2 cups shredded cheddar cheese

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Once the beef is browned, remove any excess fat, leaving just a little bit for flavor.
  2. Add the chopped onion and bell pepper to the skillet, and cook for about 3-4 minutes, until softened.
  3. Stir in the chopped cabbage, diced tomatoes, and all of the seasonings. Cover the skillet with a lid and cook for 20-25 minutes, stirring occasionally.
  4. Taste the dish and adjust the seasoning with additional salt or other spices if desired.
  5. Sprinkle the shredded cheddar cheese over the skillet, then cover again to melt the cheese.
  6. Serve and enjoy! You can enjoy this dish on its own or serve it with rice for those not following a keto diet.

Notes

  • You can substitute ground turkey for the ground beef if preferred.
  • If you don’t have Tony Chachere’s seasoning, you can use a mix of salt, pepper, and paprika.
  • This dish can be made ahead and stored in the fridge for up to 3 days.
