Ingredients
2 cups blackberries
3 tbsp balsamic vinegar
6 tbsp sugar
2 tbsp lemon juice
Kosher salt
300 g double cream brie cheese
1 tbsp chopped fresh thyme
8 slices sourdough bread
Butter, as needed
Instructions
- In a saucepan, combine the blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Bring to a boil over medium-high heat, then reduce the heat and allow the mixture to simmer.
- Break down the blackberries by mashing them with a wooden spoon or potato masher. Simmer for 7 to 10 minutes until the mixture thickens into a jam. Transfer the jam to a bowl and let it cool.
- Slice the brie cheese into ½-inch thick slices.
- Heat a skillet over medium heat. Spread butter on one side of four slices of sourdough bread. Place the buttered side down in the skillet. Add a layer of brie cheese on top.
- Fry the bread slowly until the brie softens and the bread turns golden brown. Sprinkle with chopped thyme.
- Spread blackberry balsamic jam on the remaining slices of bread. Place them jam side down over the brie. Butter the top side of the bread and flip the sandwich carefully.
- Continue to fry until the bottom bread is golden and the brie is fully melted.
- Transfer to a cutting board, cool for a few minutes, slice, and enjoy!
Notes
- For added freshness, you can add greens like arugula or spinach before grilling.
- Camembert, goat cheese, or sharp cheddar are great substitutes for brie.
- Feel free to use ciabatta or baguette instead of sourdough for a different texture.
- The blackberry balsamic jam can be made ahead of time and stored for up to 3 days in the fridge.
