Blackberry Balsamic and Brie Grilled Cheese

A grilled cheese sandwich with a sophisticated twist, featuring creamy brie, tangy blackberry balsamic jam, and crispy sourdough bread.

Ingredients

2 cups blackberries

3 tbsp balsamic vinegar

6 tbsp sugar

2 tbsp lemon juice

Kosher salt

300 g double cream brie cheese

1 tbsp chopped fresh thyme

8 slices sourdough bread

Butter, as needed

Instructions

  1. In a saucepan, combine the blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Bring to a boil over medium-high heat, then reduce the heat and allow the mixture to simmer.
  2. Break down the blackberries by mashing them with a wooden spoon or potato masher. Simmer for 7 to 10 minutes until the mixture thickens into a jam. Transfer the jam to a bowl and let it cool.
  3. Slice the brie cheese into ½-inch thick slices.
  4. Heat a skillet over medium heat. Spread butter on one side of four slices of sourdough bread. Place the buttered side down in the skillet. Add a layer of brie cheese on top.
  5. Fry the bread slowly until the brie softens and the bread turns golden brown. Sprinkle with chopped thyme.
  6. Spread blackberry balsamic jam on the remaining slices of bread. Place them jam side down over the brie. Butter the top side of the bread and flip the sandwich carefully.
  7. Continue to fry until the bottom bread is golden and the brie is fully melted.
  8. Transfer to a cutting board, cool for a few minutes, slice, and enjoy!

Notes

  • For added freshness, you can add greens like arugula or spinach before grilling.
  • Camembert, goat cheese, or sharp cheddar are great substitutes for brie.
  • Feel free to use ciabatta or baguette instead of sourdough for a different texture.
  • The blackberry balsamic jam can be made ahead of time and stored for up to 3 days in the fridge.
