A lighter, fresher take on the classic Big Mac burger, this Big Mac Salad combines crispy iceberg lettuce, lean ground beef, shredded cheese, and tangy pickles for a satisfying, healthy dish.

  • Total Time: 20 minutes
  • Yield: 8 servings

Ingredients

6 cups chopped iceberg lettuce

pounds very lean ground beef, browned and drained

1½ cups shredded Colby jack cheese

1 cup diced Roma tomatoes

1 cup sliced red onion

½ cup diced dill pickles

Thousand Island dressing (to taste)

Instructions

  1. Add the chopped lettuce to an extra-large serving bowl.
  2. Sprinkle the cooked ground beef over the lettuce.
  3. Sprinkle the shredded cheese, diced tomatoes, sliced onion, and diced dill pickles over the ground beef.
  4. Toss to combine all the ingredients together.
  5. Drizzle as much or as little Thousand Island dressing over the top as desired. Serve immediately.

Notes

  • For a lighter or vegetarian option, substitute ground beef with ground turkey, chicken, or plant-based protein.
  • Try different dressings such as ranch, French, or a homemade creamy dressing for variety.
  • Feel free to swap Colby jack cheese with cheddar, mozzarella, or your favorite cheese.
  • Consider adding avocado, or sautéed mushrooms for extra flavor and texture.
  • This salad is best served fresh, but can be stored in the fridge for 1-2 days. Keep the dressing separate if storing leftovers.
  • Reassemble the salad and add fresh dressing when serving leftovers for the best taste.
