Ingredients
1 homemade or store-bought pizza dough
2 tablespoons extra virgin olive oil + extra for drizzle
2-3 chicken cutlets
1 cup BBQ sauce (Sweet Baby Rays or preferred)
½ red onion, thinly sliced
2 cups mozzarella, grated
½ cup gouda, grated
1-2 tablespoons fresh cilantro leaves, roughly chopped
Fresh ground black pepper, as desired
Instructions
- Preheat oven to 425˚F. Marinate chicken in ½ cup BBQ sauce for 25-30 minutes.
- Roll pizza dough into a 12-inch circle and refrigerate.
- Drizzle olive oil in a skillet and cook chicken over medium-high heat until no longer pink, 7-10 minutes. Remove, cool, and slice into bite-size pieces.
- Remove pizza dough from fridge. Brush with olive oil and spread remaining BBQ sauce, leaving edges clean.
- Sprinkle 1 ½ cups mozzarella and ¼ cup gouda over dough.
- Add chicken and red onion, then top with remaining cheese.
- Place pizza on a baking sheet or pizza pan. Bake 15 minutes until cheese is melted and crust is golden.
- Remove from oven, top with cilantro and black pepper. Serve immediately.
Notes
- For a spicier version, add jalapeños or chili flakes.
- Make it vegetarian by omitting chicken and adding vegetables.
- Use rotisserie chicken as a time-saver.
- Pre-bake dough for 5 minutes to avoid a soggy crust.
- Store leftovers in the fridge for up to 3 days and reheat in oven or skillet.
