Ingredients
½ cup Banana (about 1 large banana)
¾ cup Self-Rising Flour (or 1 cup all-purpose flour with 2 teaspoons of baking powder)
Coating:
½ teaspoon Cinnamon
¼ cup Unrefined Sugar (or Monk fruit blend, coconut sugar for a sugar-free version)
2 tablespoons Coconut Oil (melted, or melted vegan butter)
For kneading:
2–3 teaspoons Melted Coconut Oil
Instructions
- Mash the banana into a smooth puree, making sure you get about ½ cup for the batter.
- Add the self-rising flour and stir with a rubber spatula until it begins to form lumps.
- Oil your hands with melted coconut oil and knead the dough. It will be sticky, which is normal. If needed, continue adding a little oil to keep it smooth and elastic, but avoid over-flouring the dough.
- Grease your hands again and take about a tablespoon of dough to form a ball. Place it on a plate lined with parchment paper. Repeat until all the dough is used.
- Spray avocado oil on the dough balls.
- Preheat your air fryer to 350°F (180°C). Spray the air fryer basket with oil and place the donut holes in the basket, making sure they are about 1 inch apart.
- Air fry for 6-7 minutes, or until they are puffed and golden brown. The donut holes will have a slightly rough texture and will be dry on the outside, but soft inside.
- For the coating: Brush each warm donut hole with melted coconut oil, then roll them in the cinnamon sugar to coat evenly.
- Serve warm and enjoy!
