Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Mash the banana in a medium bowl until smooth. Stir in sugar and melted butter. Optionally, add vanilla extract.
- Sift in the flour, baking soda, and salt. Stir until a dough forms, being careful not to overmix.
- Fold in optional mix-ins like chocolate chips or nuts.
- Drop dough onto the baking sheet with a tablespoon or cookie scoop, spacing about 2 inches apart.
- Bake for 10–12 minutes until edges are golden and tops look set.
- Cool on the pan for 5 minutes before transferring to a wire rack.
