Ingredients

Lemon Sauce

2 tbsp melted butter

5 garlic cloves, minced

For Coating

1/3 cup all-purpose flour

1 tsp ground coriander

3/4 tsp sweet Spanish paprika

3/4 tsp ground cumin

3/4 tsp salt

1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, combine the lemon juice, olive oil, and melted butter to create the lemon sauce. Set aside.
  3. In another shallow bowl, mix the all-purpose flour with the ground coriander, paprika, cumin, salt, and black pepper.
  4. Pat the cod fillets dry with paper towels. Dip each fillet into the lemon sauce, ensuring it’s well-coated, then dredge it in the seasoned flour mixture. Shake off any excess flour.
  5. Heat a skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the coated cod fillets and sear for about 2 minutes on each side, or until golden brown.
  6. Transfer the seared fillets to a baking dish. Pour the remaining lemon sauce over the fillets and sprinkle with minced garlic.
