Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of salt (optional)
1 cup + 2 tablespoons cottage cheese (2% or 4%)
1 egg (optional, for egg wash)
Toppings: everything seasoning, poppy seeds, sesame seeds
Instructions
- In a medium bowl, combine flour and baking powder. Add a pinch of salt if desired.
- Make a well in the center and add cottage cheese. Mix with a fork or spatula until a chunky dough forms.
- Transfer dough to a floured surface and knead for 1–2 minutes until semi-smooth, adding flour if sticky.
- Divide into 4 equal portions. Roll each into a 6–7 inch log and connect ends to form bagels.
- Whisk egg with a splash of water or milk. Brush over bagels and sprinkle with toppings.
- Preheat air fryer to 300°F. Lightly spray or line basket with parchment paper.
- Place bagels in a single layer, cooking in batches if necessary. Air fry for 15–17 minutes, checking at 10 minutes.
- Once golden brown and fluffy, cool for at least 15 minutes before slicing and serving.
Notes
- For gluten-free, use a cup-for-cup gluten-free flour blend.
- For dairy-free, use plant-based cottage cheese.
- To make sweet bagels, omit salt and add cinnamon and sweetener.
- Store in the fridge for up to 5 days or freeze for up to 3 months.
- Reheat in air fryer, toaster, or microwave.
